This is a quick and easy appetizer that is very tasty and uses a lot of eggs.

  • 1 lb. cheddar cheese, grated
  • 8 oz. pickled jalapeño pepper slices
  • 6 eggs, beaten

Preheat the oven to 350° F. Grease an 8″x8″x 2″ baking pan with butter.  Spread the jalapeño slices over the bottom of the pan.  Top with cheese, and pour beaten eggs over all.

Bake for 30 minutes at 350° F until set. Allow the snack to cool thoroughly then cut it into squares.

Variations: you can substitute Monterey Jack cheese in place of cheddar, and you can substitute canned green chiles in place of jalapeño peppers.
