This is a tasty and easy to prepare breakfast pancake recipe that uses a lot of chicken eggs. Serves 6.
- 3 tbsp. butter
- 6 eggs, beaten
- 1 cup flour
- 1 cup milk
- 1/2 tsp. vanilla extract
- 1 tbsp. sugar or honey
Preheat the oven to 350 degrees F. Place butter in a 9″x13″x2″ baking pan and put it into the oven until the butter is melted. Meanwhile, combine the rest of the ingredients using a wire whisk or hand mixer to make a batter. Coat the bottom of the baking pan with the melted butter, and pour the batter evenly into the baking pan.
Bake uncovered for 15 to 18 minutes. The pancake will expand and “poof up” around the edges. Cut it into squares and top it with yogurt, fresh or canned fruit, and/or maple syrup. Enjoy.

I’ve been making these since I was a child-my German Grandmother taught me. We slice peeled apples into the mix before putting it in the into the oven. This is good cold too!
Oh yummy………I am definitely going to make this and thanks for the tip to add apples. Our chickies should be laying just in time for the apple crop this fall so I will have most of what I need!! :o)
I love my pancakes to have something on the top like vanilla ice cream or honey! That is really something!
Both recipes look and sound great. I will use glueten all purpose flour and see if works! Hope so

Thanks for the recipe! We had pannekoeken all the time growing up and I loved it and had lost the basic recipe. Here’s my favorite variation:
I use a cast iron skillet and put butter, brown sugar or honey, and apple slices in and sautee on the stovetop. Once that’s done I put the pancake ingredients in and bake as directed.
We always had a fun time watching the pancake “fall” after it came out of the oven.

My latest “doctor” to pancakes is a spoon full of sour cream and a douse of vanilla .. your project sounds good and our nine buffs can our run the two of us .. I like the six egg idea. I have some left over chicken and will try it out in the morning.
